Philosophy

Our dream is to offer our customers a unhurried and a holistic dining experience. An experience where the customer gets to see the entire path of the dish, from the cultivation of the raw materials to serving it on the table. All of this takes place where the ingredients are prepared, in the heart of the farm, in the warm and atmospheric atmosphere of our barn.

 

We cultivate our fields ecologically, respecting the principles of organic farming. High-quality fresh ingredients are the heart of our restaurant, and respecting and nurturing nature and its diversity is one of our tasks. We do not use any pesticides or fertilizers, which are not acceptable in organic farming, and we minimize the generation of waste in everything we do. We strive to have almost all of the ingredients for our pizzas grown by us or collected from our forest.

 

In the starting year 2023, the fields and greenhouse were still on a green manure crop, so honey and game meat were our only own ingredients. In 2024, the pizzeria's own ingredients were: herbs, honey, game meat, rhubarb, lingonberries, blueberries, gooseberries. In 2025, we started cultivate again. This year, in addition to the previous year's own ingredients, we will also produce: tomatoes, cherry tomatoes, chilies, potatoes, beans, pumpkin. From now on, the amount of our own produced ingredients will increase every year.

Circular economy and zero waste are an important part of our restaurant's philosophy. All excess is composted and returned to the field as nutritious compost for our incoming raw materials.
